I had another reader whose fruit went bad after she made the starter and then started soaking the fruit in it with the sugar. She was so sad but went ahead and tried again. I'm afraid it might have happened again as the last thing she told me was that the starter itself was fermenting. The only thing I could figure was that it was caused by her not stirring every day. She only stirred every other day. I think that really helps preserve the mixture since the sugar is a preservative. If it doesn't dissolve, it can't work as well to preserve the fruit and liquid. So I'm glad you were a good girl and stirred daily. :) Your cakes look great!
