Jalapeno Popper Deviled Eggs - #10DaysofTailgate

Deviled eggs are one of my favorites at a party.  People are often impressed because they know how time consuming it can be to boil and peel and cool the eggs.  I seriously stink at making hard boiled eggs so my secret is to buy them already hard boiled. Yep, no more boiling and peeling for me. I know I've said it before but these seriously are the best things ever. I tend to make hard boiled eggs much more often now.  

The guys around here like things a bit spicy. So I knew that these Jalapeno Popper Deviled Eggs would be a hit.  And were they ever!  They were gone almost before they hit the plate.

Jalapeno Popper Deviled Eggs Recipe

6 hard boiled eggs, peeled
2 tbsp. mayo or greek yogurt
3 tbsp. cream cheese
3 tbsp. cheddar cheese, finely shredded
1/4 cup jalapenos, pickled or fresh, diced finely
1/4 cup bacon, cooked and crumbled finely
6 tbsp. cheddar cheese, shredded finely

Cut the eggs in half, scoop the yolks out, mash the yolks and mix with the mayo, cream cheese, cheddar, jalapenos and bacon.  Place  about a tbsp. of the mixture back into the egg whites.  Sprinkle on remaining cheddar, place on a baking sheet and broil for a minute or so until cheese has melted.
