Cinnamon Breakfast Muffins

Cinnamon mini muffins smothered in butter and cinnamon sugar.  The cinnamon sugar makes them slightly crunchy.  What could possibly be better?

You can make regular sized muffins or mini muffins. I  preferred the mini muffins as it made for more of a crunch. Plus, if you make mini muffins,  you get to eat more of them.  

I did the easiest part. The muffins.  Then I nominated my daughter to roll the muffins in butter and dip in cinnamon sugar. It didn't take too long but the hard part was waiting for her to finish so we could dig in!  

Cinnamon Breakfast Muffins Recipe

  • 3 cup flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cinnamon
  • 1 cup sugar
  • 2/3 cup butter flavored Crisco
  • 2 eggs
  • 1 cup milk
  • 2 1/2 cup sugar
  • 1 1/2 Tbsp. cinnamon
  • 1 1/2 sticks butter, melted
  1. Mix one cup sugar with shortening until well blended. Add eggs.
  2. In separate bowl, mix flour, baking powder, salt, 1/2 tsp cinnamon and nutmeg. Add flour mixture alternately with milk to the sugar mixture. Beat well after each addition.
  3. Lightly grease mini muffin cups (or regular muffin pan). Fill muffin cups half full. Bake in a 350 degree oven for 20-25 minutes (minis for about 13-15 minutes).
  4. While baking, melt 1 1/2 sticks of butter. In separate bowl, mix sugar with cinnamon. Dip baked muffins in butter, coating thoroughly, then coat with cinnamon-sugar mixture. You can get about 48 mini muffins or 18 regular sized muffins.
