French Toast with Peach Topping

We've eaten so many peaches this year.  I love peach season.  We buy huge crates of peaches from Sam's Club and they seem to be gone in no time. We've put them on pancakes and waffles but my favorite is french toast. There is just something awesome about the cinnamon on the crispy french toast smothered with a sweet syrup and fresh peaches.  Summer just can't get any better than that!

French Toast with Fresh Peach Topping

2 eggs
1/2 cup milk (I used vanilla almond milk)
1 tsp vanilla
1 tsp cinnamon
3 to 4 fresh peaches, peeled & sliced
1/4 cup sugar
4 or 5 slices of bread 
*optional whipped cream
Beat eggs, vanilla, and milk together in a wide shallow bowl.  Put one slice of bread at a time in the mixture and allow it to soak in on both sides. Place the bread on a hot pan with a bit of butter melted on the bottom. Sprinkle the side that is up with a little cinnamon before flipping. When the bread is toasty you can flip it.
In a separate sauce pan place the peaches and the sugar. Allow the fruit to cook until a simple syrup is formed and the fruit is warm.
Serve the warm fruit and syrup mixture over the french toast. Top with whipped cream if desired.

  1. I love peaches and have had really great luck with the ones I have bought so far this year. Nothing spoils a peach more than getting a mealy one. Your frech toast looks yummy!
