Banana Chocolate Chip Cinnamon Coffee Cake


It was a banana emergency.  Really, it was. Too many bananas sitting on the counter needing to be used right away. I'd already cut some up to freeze for smoothies.  I'd mashed several up for banana oatmeal.  I'd made a couple of my go-to banana recipes lately. I needed  inspiration.  I put a call on facebook for some banana ideas.  My food blogger friends came up with several wonderful ideas.  I was recommended this coffee cake recipe and had all the ingredients and made it right away. 


I got all the little ones together and everyone helped.  This is a great recipe for little hands.  Plenty of things to sprinkle, mix and squish.  Everyone had so much fun making these. They all took turns squishing the bananas!

Banana Chocolate Chip Cinnamon Coffee Cake
Adapted from Baking and Boys

3/4 cup mini chocolate chips
2/3 cup light brown sugar, packed
1/2 cup walnuts or pecans, chopped
1/2 tablespoon ground cinnamon
1 1/2 cups flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. salt
3/4 cup sugar
1 stick of butter, softened
1 large egg
1 1/3 cups very ripe banana, mashed (I used about 3 medium bananas)
3 tablespoons buttermilk


Preheat oven to 350 degrees.  Butter and flour an 8 inch square pan.  

In a medium sized bowl, stir together the chocolate chips, brown sugar, walnuts, and cinnamon.  Set aside.

In another bowl, whisk together to sift the flour, baking soda, baking powder, and salt.  Set aside.

With an electric mixer, beat butter and sugar until well combined.  Add egg and beat until fluffy.  

Stir in mashed bananas and buttermilk.  Add dry ingredients and blend well.  

Spread half the batter in prepared baking pan.  

Sprinkle half the streusel evenly over the first half.  

Spread the remaining batter over that and top with the rest of the streusel topping.  

Bake until toothpick inserted in center comes out clean, about 40 - 45 minutes. Cool and enjoy!
