My kids love muffins in the morning for breakfast. Often we'll buy muffins or I'll make the ones in the package where you just add water. But really, it's not hard at all just to make muffins. Then you can make some really good muffins.
Banana paired with chocolate chips and nuts made for a fantastic and incredibly tasty morning muffin. All the kids devoured them and were asking for more. So much better to make fresh muffins.
Banana Chocolate Chip Nut Muffin Recipe
1 1/2 cups sugar
1 1/2 sticks butter, melted
2 cups mashed overripe bananas
3 large eggs
2 3/4 cups flour
2 1/2 tsp. baking soda
1 tsp. salt
1 cup chocolate chips
1/2 cup chopped walnuts or pecans
Preheat the oven to 350. Line 2 - 12 cup muffin tins with liners or butter them well.
In a large bowl, combine the sugar, melted butter, bananas and eggs and mix thoroughly. In another bowl whisk the flour with the baking soda and salt. Add the dry ingredients to the wet ingredients and whisk until the batter is evenly distributed. Stir in the chocolate chips and nuts.
Spoon the batter into the prepared muffin cups. Bake for about 28 minutes until a toothpick inserted in the center of the muffins comes out with a few moist crumbs attached. Let cool and enjoy!
