Southwestern Tuna Salad Sandwich

I remember eating tuna fish sandwiches when I was single and poor.  Remember those?  A can of tuna fish simple mixed with some mayo?  On a fancy day I might have added some chopped onion and some mustard and grilled it.  Poor mans meal. 

While there is nothing wrong with the simple tuna fish sandwich, it's nice to liven them up a bit, right?  I've used this same recipe for chicken or tuna.  My husband is quite the tuna fan and likes it for lunch.  Actually, he does still like the simple tuna sandwich too!

Southwest Tuna Salad Sandwich Recipe

2 (6 oz) cans tuna, drained
1 (4 oz) can diced mild green chiles, drained
1/4 c. green pepper, diced
1/4 c. red pepper, diced
1/4 c. onions, diced
2 tbsp. cilantro, minced
1/4 c. diced tomato 

2 tbsp. mayonnaise
2 tbsp. sour cream
2 tbsp. fresh lime juice
1/2 tsp. garlic salt
1/2 tsp. ground cumin
1/4 tsp. chili powder
1/8 tsp. pepper
Tabasco sauce to taste

Mix salad ingredients together. Mix dressing ingredients together.  Stir dressing into salad, mix well. Flavor gets even better as it sits in the fridge. Serve with cheese on a sandwich cold or hot like a grilled cheese.
