Chocolate Hummus

Look what I ate for dinner!  Chocolate!

Okay, so before you start saying, "Chocolate and beans?!  Ewwwww!!", listen up.  It's good. No it's better than good. It's decadent and HEALTHY.  I used splenda to sweeten it so it kept the calories way down. Trust me, this was GOOOOOOOOOD.

The 9 year old who doesn't like ANYTHING I make, especially beans, loved it. I mean seriously loved it. I actually wish he hadn't loved it so much.  Then I could have eaten more.  (Yes, I'm a selfish mama.)

I also toasted up some homemade whole wheat tortillas sprinkled with cooking spray, sugar and cinnamon.  Excellent treat with the hummus. Seriously, you gotta try this!

Chocolate Hummus

1 (15 oz.) can chickpeas, drained and rinsed
2 tbsp. olive oil
1/2 cup cocoa
1/2 cup splenda (or sugar)
1 tsp. vanilla
1/2 tsp. salt
2 - 4 tbsp. warm water

Mix everything in a food processor. Add water as needed for consistency.

  24. Debbi.. just made this! Oh my! So good! My little monkey was eating it with a spoon it's so good. Kind of reminds me of brownie batter. The only change I made was to use a mix of xylitol and agave syrup for the sugar, and only a mix of just over 1/4 cup together. I also added a spoonful of natural almond butter.

Thanks so much for pointing me to this recipe! I am always trying to find ways of getting more protein into my little monkey, as she is going through a picky stage.
