Any recipe where you add rum has to be good, right?
Well, this is just a kicked up version of banana bread with the rum. The icing really added a lot of flavor and just rocked!

Bananas Foster Amish Friendship Cake/Bread
1 1/2 cups mashed ripe banana, about 3 banana
1 cup packed brown sugar, divided
5 tbsp. butter, divided
1 1/2 tbsp. rum extract or 3 tbsp. dark rum
1/2 cup Amish Friendship Starter
1 large egg
1 1/2 cups whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. allspice
1/3 cup powdered sugar
1 tbsp. butter, softened
1/2 tsp. rum extract (or dark rum)
Combine banana, 1/2 cup brown sugar, butter and rum extract in a sauce pan. Cook over medium heat until mixure starts to bubble, stirring constantly. Remove from heat. Pour into a large bowl and let cook some. When cooled, add Starter, remaining 1/2 cup brown sugar and egg. Mix thoroughly until well incorporated.
Combine flour, baking soda, salt, cinnamon and allspice in a small bowl. Add flour mixture to banana mixture and beat until just blended. Pour batter into a 9 x 5 loaf pan or an 8 x 8 pan sprayed with cooking spray. (I used an 8 x 8 pan). Bake at 350 degrees for about 50 - 60 minutes or until a toothpick inserted comes out clean. Let cool.
To make the glaze, melt the butter and combine with powdered sugar and rum extract. Add milk if necessary to thin out. Drizzle over warm bread or cake.
