Amish Lemon Coconut Bread

I think that lemon cake is my favorite.  I change my mind often but I really, really do like lemon cake.  Adding coconut just seemed to make it better!

My loaf sunk in the middle but it tasted great!!

Amish Lemon Coconut Bread Recipe

1 cup Amish starter
3 eggs
1 cup oil
1/2 cup milk
1 cup sugar
1/2 tsp. lemon extract
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 cups flour
2 small boxes of lemon pudding
1 1/2 cup coconut + 1/2 cup for the top

Grease 2 - 8 x 8 in. pans or 2 loaf pans.  Mix ingredients all together and pour evenly into the 2 pans. Sprinkle with coconut.  Bake 1 hour at 325.

  1. It looks so good even with the sunken middle. Do you think it's because of the pudding? I usually don't check out your Amish bread recipes, because I don't have a starter and can't make any of them, but I couldn't resist the lemon/coconut. My lemon tree is full and the lemons are ready and I have a full bucket of coconut flakes from Tropical Traditions that I am ready to use. I have to gather some ideas.

    I'm just sorry that I looked at steaming coffee is sitting next to me and my plate is empty and I want a bite of your bread so badly...I wish I could taste it! :D

  8. Who cares about a sunken middle when bread tastes that good! I love lemon and coconut combined.

    In regards to your question about the soup... they used 1 cup of Corona. Hope this helps and that you love the soup as much as we did.

  11. That sounds beyond delicious. Unfortunately, I am going to have to file that one away because I know that I would wind up eating the whole loaf in one sitting and that isn't very healthy. I will definitely have to make it next time my parents visit. My dad is the only other one in my family who will eat coconut with me.
