Caramelized Onion Bread Pudding



You should have seen my familys' faces when I informed them that I was making onion pudding. 

They weren't impressed. 

Until of course they tried some.  Then they loved it! 

My husband needed a burger along with it as he thinks that all meals require meat.




I really can't get enough of caramelized onions!  Pair that with zucchini and cheese and you have pure deliciousness!  This was one of my favorite meals.  I only regret that there weren't enough leftovers!


Caramelized Onion Bread Pudding Recipe

1 tbsp. olive oil
2 large sweet onions, sliced
1 zucchini (8 oz)
8 oz swiss cheese
1 cup egg beaters
2 cups milk, 1%
1 1/2 tsp. salt
1 tsp. dried thyme
1/4 tsp. pepper
6 cups bread (about 12 pieces of 50 calorie bread)


1.Heat oil, add onions and cook for about 25 minutes, stirring occasionally, until onions are brown and caramelized.


2.Spray 13 x 9 in. glass pan with cooking spray, layer 1/2 the bread, 1/2 the zucchini and 1/2 the cheese and a little less than 1/2 the onions. Sprinkle the rest of the bread and the rest of the zucchini.


3.In large bowl, combine egg, milk and spices. Pour over bread mixture. Place remaining onions over bread mixture. Cover with foil, bake 35 - 40 minutes at 350 or until a knife in center comes out clean. Sprinkle remaining cheese over top and bake 2 - 3 minutes longer until cheese is melted.


Total calories = 2152 calories
8 servings = 269 calories per serving

  9. Carmelized onions are great aren't they? I love them however they're served. This looks fabulous, my husband and I would both love this although I think my husband would have to have a burger too! :o)

  12. When my kids were home sometimes they would not like what I was presenting for a meal and I would tell them next time it's "onion pie". I wish I would have had this recipe I would have made it for them. The next time they are home I am making this recipe for them. Thank you for sharing it.

  15. I am going to give this a try next time we have burgers for dinner.

    I don't keep egg beaters in the house. What is the egg substitue for 1 cup of egg beaters? I realize this changes the calorie count :)

  18. You really have been doing a lot with caramelized onions. This looks like it would be delicious. I get the "what are you thinking" reaction quite a bit from the mister when I made new things. Usually turns out that he likes it.

Now I am not a bread pudding fan and I am very picky about my onions (I do love them caramelized though). I just can't get over this recipe! I'll let you know how my family likes it when I make it!
