That's where todays recipe came from. Not only is it cheap, it's incredibly delicious!! I did add some celery and onion to her recipe cause I like the crunch!
I'll warn you, this is not pretty in the bowl. Luckily it's highly tasty on the lips! It was all I could do not to eat more than one sandwich!! I had another for lunch the next day though.

Cranberry Chicken Salad Sandwich
Adapted from $5 dinners
1 lb boneless chicken, cooked and shredded
1/2 cup mayo, light
2 - 3 tbsp. celery, finely chopped
1 green onion, finely chopped
1/2 of a 15 oz. can of cranberry sauce
Salt and pepper to taste
Mix everything together. Serve on Arnold Select sandwich things or whole wheat tortillas. Add lettuce if desired.
Total calories = 1220 calories
6 servings = 203 calories per sandwich without bread

I love chicken salad I've had it with dried cranberried in them but never with cranberry sauce! I will have to try this one!

The cranberry sauce in it makes it sound delicious. I agree with you about the celery and onion, I always need to have a little bit of crunch to my food.

I made a chicken dish with a cranberry topping and it was ugly but it tasted so good. Looks can be deceiving.

ReplyDeleteDeb, I am laughing because I had a Thanksgiving turkey dinner sandwich this weekend in boston and it reminded me how much I adore the taste of fowl and cranberry! I would make this with home made mayo and I just made these great pretzel rolls that are a bit sweet and would go with it as well. Food color is important isnt it? ReplyDeleteDebbi, do you fix yourself a totally different lunch then the daycare? Breakfast too? I've tried that and it's so hard. Time consuming too. I was just curious. I'm not sure about chicken and cranberry together but I know I like them seperate. I make my own cranberry sauce so could easily add all the other goodness to make this. I'll have to give it a try.
